Leon (The Cleaner, The Professional) (1994) [Mathilda's Father]: Shot several times in the back by Gary Oldman, while trying to run out of his apartment.
O Brother, Where Art Thou? (2000) [George 'Baby Face' Nelson]: Executed (off-screen) in the electric chair; we last see him being arrested as he cheerfully exclaims that he's getting the chair. (It's debatable whether this counts, since his death won't occur until well after the end of the movie, but since it's been suggested, I'll go ahead and list it.) (Thanks to Alex and Tommy)
